Apple has been quiet about the official launch date of the iPad mini with Retina Display, but that information appears to have made it into the wild today.  A new leaked document from Target (courtesy of MacRumors) indicates that the iPad mini with Retina Display will launch on November 21. That’s a full 20 days after the release of the iPad Air which debuts tomorrow (November 1).

Why is the iPad mini with Retina Display launching more than two weeks after the iPad Air?  The speculation points to the extremely limited supply of iPad mini’s that have Retina Displays due to manufacturing issues related to the smaller Retina screen.  This isn’t the first Apple product to experience severe supply constrains right out of the gate either, Apple is still having issues meeting the demand for iPhone 5s, especially for those who want the gold version or higher capacity models.

We should note that nothing is set in stone at this time, Apple has yet to confirm that this is in fact true.  We’ll keep you posted though.
